I bought this mostly for the business chapters, but the whole thing is solid. I appreciated that Chapter 1 doesn't waste time on the history of pressure cooking; it gets right into the nuts and bolts of how a weighted gauge differs from a dial gauge in real kitchen conditions. It's a little dry and could use more photos, but for reference material, that's kind of what you want. It's sitting on my desk next to my standard canning guide, and it's already got bookmarks.
