When a beginner buys a pressure canner, they receive a pot, a lid with a locking mechanism, and maybe a trivet. When a professional or a serious enthusiast looks at that same setup, they see a system. The pot and the lid are just the beginning. The accessories - the racks, the gauges, the valves, the gaskets, the baskets, the jar lifters, the headspace tools - are what transform a sealed vessel into a precise, repeatable tool for food preservation or high-speed cooking. The primary function of a pressure canner is to achieve a temperature significantly higher than the boiling point of water. At sea level, water boils at 100°C (212°F). This is sufficient for boiling-water-bath canning of high-acid foods like jams and pickles, but it is not hot enough to destroy the spores of Clostridium botulinum in low-acid foods like green beans, corn, or meat. To safely preserve these foods, you need a temperature of about 116°C (240°F) to 121°C (250°F). The only practical way to achieve these temperatures in a home or small commercial kitchen is to increase the pressure inside the cooking vessel, which raises the boiling point
