Picked this up for our restaurant's produce program and it's genuinely useful, but I have a couple of quibbles. The storage and receiving protocols are spot-on - we've already cut our waste by a good chunk by following the temperature and drying advice. I also appreciate that it finally explains the difference between baby yu choy and the flowering stuff, which our supplier had been mixing up. The reason it's not a full five stars is that the chapter on business opportunities feels a bit hypothetical and less operational than the earlier sections, and the glossary, while helpful, is pretty basic for anyone with serious produce experience. Still, for the price, it's a solid upgrade from our vendor's one-page spec sheet.
