Wax paper, in its most basic form, is a sheet of paper that has been coated with a thin layer of wax on one or both sides. This simple construction belies its utility and explains its enduring presence in professional kitchens, food processing plants, and workshops. The paper base provides structure, strength, and flexibility, while the wax coating imparts three critical functional properties: moisture resistance, a non-stick surface, and a barrier against air. Understanding how these three properties work in practice is the foundation for using wax paper correctly and getting the most out of it.

The story of wax paper begins with its primary function: creating a barrier. The wax, typically a food-grade paraffin wax derived from petroleum, coats the porous surface of the paper. This coating is hydrophobic, meaning it repels water. When you wrap a sandwich in wax paper, the paper does not become saturated with moisture from the bread or the fillings. The water molecules bead up on the surface of the wax rather than soaking into the fibers of the paper. This is a fundamentally different mechanism from that of parchment paper, which is coated with silicone and is heat-resistant. Wax paper's barrier is functional only at lower temperatures; the wax has a melting point typically between 50 and 70 degrees Celsius (122 to 158 degrees Fahrenheit), which is why it is not suitable for direct heat use.
