About this book

The potato ricer looks like a simple tool, but its performance varies drastically between a $12 household model and a $140 commercial unit. The difference is not branding; it is the lever ratio that determines hand force, the hoop gauge that resists warping, and the disc hole geometry that controls texture and throughput. This handbook examines those variables in depth, with concrete test data and real kitchen examples, so you can judge any ricer on measurable criteria rather than marketing claims.

Written for professionals and serious enthusiasts, the book covers the full lifecycle of a ricer: selecting the right configuration for your output volume, proper technique for pressing potatoes, root vegetables, and soft fruits, daily cleaning protocols that prevent hoops corrosion, and diagnosing common failure modes like bent plungers and stripped threads. It also includes a chapter on the business side of ricers, covering resale valuation, servicing opportunities, and private-label sourcing, plus a practical glossary and FAQ section for rapid reference.

The goal of this handbook is not to sell you a specific brand, but to make you an informed buyer and user. Every specification, recommendation, and troubleshooting step is grounded in how ricers actually behave in a commercial kitchen, restaurant prep station, or high-volume home kitchen.

It's a thorough book, no question - the chapter on lever ratios and hoop gauge genuinely changed how I look at my prep tools. I was a bit let down that the buying section spends so much space on commercial scenarios and business resale; I'm an enthusiast home cook, and I felt like half the book was aimed above my head. Still, the maintenance and cleaning chapter alone is worth the price, and I've already fixed a stubborn clogging issue with my old unit. It's a solid 3 stars: good reference, but not the universal audience the subtitle implies.

I purchased this for the long-term care of my two commercial ricers, and the troubleshooting section is genuinely well done. The advice about hoop corrosion from acidic foods and the field repair for bent plungers was directly applicable, and the chapter on choosing a unit stopped me from overpaying for a brand when the disc spec mattered more. My reservation is that the author gets a bit dry in the business chapter, and I could have used more visual diagrams of double-lever mechanics. But for what it promises - a practical handbook - it mostly delivers. Three stars feels right.
