This book explained the difference between BTU output and wattage and, more importantly, how a unit without proper internal airflow isn't going to do you any favors. The chapter on installation alone was worth it - my old unit was in a spot right next to my steamer, and I had no idea that was warping my plates. The troubleshooting chapter is laid out so clearly that I was able to diagnose a bad thermostat on my own. I've already recommended it to two other caterers. If you're in food service, just buy this instead of guessing like I did.
