About this book

Dinnerware sets seem simple, but they are engineered products with significant commercial and operational implications. A poorly chosen set can lead to escalating replacement costs, safety hazards in a busy kitchen, and a negative impression of your brand. Conversely, a well-specified set is a durable asset that performs reliably under the stress of daily use. The Complete Handbook of Dinnerware Sets is a comprehensive resource designed to help professionals make sense of the entire field, from the chemistry of porcelain to the logistics of supply chains and the nuances of rental agreements.

This book is structured for practical use. It begins by establishing a solid foundation of what dinnerware actually is, how it's manufactured, and why its physical properties matter in real-world settings. Subsequent chapters provide a rigorous framework for evaluating products, making procurement decisions, implementing best practices for handling, and troubleshooting common problems like crazing, chipping, and staining. The final sections serve as a resource for long-term planning, covering market trends, expert organizations, and a detailed glossary of industry terms.

Crucially, this is not a catalog or a marketing brochure. It's a rigorous, neutral reference that equips readers with the knowledge to ask the right questions, interpret specifications, and negotiate effectively. Whether you are outfitting a new restaurant, standardizing a hotel's banquet service, or pursuing a business opportunity in reselling or consulting, this handbook provides the practical knowledge to succeed.

This is the reference book I wish I had when I started running purchasing for a 40-table bistro. The physical and chemical details in Chapter 1 alone saved me from making a costly mistake with low-fit glaze porcelain. Finally, a book that treats dinnerware like the engineering material it is, not just a decorative item.

It's a solid reference with a lot of accurate technical information, exactly what the title promises. My main gripe is that it can be a bit dry and dense in the first chapter, and I sometimes felt I needed a material science degree to keep up. The chapters on maintenance and buying frameworks are definitely where the book's practical soul lives. Good to have on the shelf, just not something I'd read cover-to-cover for fun.

As someone who organizes high-end events, I was drawn in by the promise of a neutral, engineering-focused guide. The reviewer mentioned non-stick and rim treatments, and the book handles those with far more objectivity than any vendor brochure I've seen. My only complaint is that I wish the chapter on specific manufacturers had gone a little deeper into their private-label policies, but I gathered enough to make smart calls.

I do repairs for a restaurant group, and I'm ordering a second copy to keep in the work van. The breakdown of glaze stress and material properties is fantastic and directly explains why certain brands chip at the rim and others in the middle. For me, chapter one was worth the price of the book. It’s a must-have manual.

The framework in the first chapter on evaluating a set based on its 'use rate' finally gave us a number to plug into our P&L. We redesigned our cafe's table settings based on the book's logic about operational context, and we've already cut down on replacements. The writing is clear and to the point. A solid addition to our management library.

It's very thorough, but I found the reading to be a bit slow-moving when discussing clay bodies and firing temperatures. I was anticipating a more direct 'buy this vs. that' but the book is intentionally operating at a deeper level. The information is definitely all there, but you have to be prepared to do the work. The overview of the industry structure and business opportunities in the later chapters is genuinely interesting.

I bought this for the business chapters, but all chapters are clearly written. I'll give three stars because it seems slightly biased toward commercial, high-density environments. As a serious home enthusiast, I struggled to find applications for the heavy-duty service procedures and breakage-rate metrics. There is still a lot of useful material, but a few chapters read like they are written solely for a Michelin-starred commissary rather than a domestic setup.

I appreciated that it practices what it preaches - it's a reference manual without any marketing hype. The explanation of thermal shock in Chapter 1 is the clearest I've read. The guidelines on how to run a private-label operation were practical, and I have already sent a RFQ to a manufacturer mentioned in that section. Great book to have, and it sits well next to the other serious trade references in my office.
