Finally, a reference book that treats cocktail mixes as an engineering problem rather than a lifestyle product. I used Chapter 1 to rewrite our bar's supplier spec sheet and caught two vendors who were selling us sweetened water with premium pricing. The section on brix and acid levels alone paid for the book. My only gripe is I wish the troubleshooting chapter covered peristaltic pump failures in more depth, but the general repair logic still applied. This is staying on my office shelf, not on a coffee table.
