Every professional who works with candy or chocolate - whether buying ingredients, running a production line, or selling finished goods - is making decisions based on assumptions. Those assumptions are sometimes wrong. A pastry chef might assume a higher cocoa percentage means a more intense chocolate flavor, but viscosity and particle size matter just as much to the final product. A retail buyer might assume that a premium price means premium raw materials, but brand positioning and packaging often account for the difference. The Two Families: Sugar Confectionery and Chocolate
The term "candy" covers two structurally different families of products. The first family is sugar confectionery, where the primary structural material is sugar in various crystalline or non-crystalline states. The second family is chocolate, where the primary structural material is cocoa butter, a fat that behaves in ways that are fundamentally different from sugar.
Sugar confectionery includes hard candies, caramels, toffees, gummies, marshmallows, and fondants. In these products, sugar exists in one of two basic forms: crystalline or non-crystalline (glassy). Hard candy is a glassy state - the sugar solution has been heated to a high temperature, then cooled rapidly, preventing the sugar molecules from organizing into crystals.
