Chapter 1: First Day
Welcome to Day One
Let's be honest about what today is and what it isn't. Today is not the day you will pour a perfect rosetta. Today is not the day you will impress anyone who knows anything about coffee. Today is the day you will get your hands wet, literally and figuratively, and discover what the basic ingredients of latte art actually feel like.
Before we start, here's the single most important thing to understand about latte art as a total beginner: the art is in the milk, not the coffee. The coffee is the canvas. The milk is the paint. And if the milk is wrong - too foamy, too watery, too hot - then no amount of pouring skill can save you. So today, we're not going to pour anything artistic. We're going to make a cup of coffee with steamed milk, and we're going to notice what the steam wand does, and we're going to pour some milk into a cup and just look at it. That's it. That's the whole session. You will end today with something you made, not something that's perfect.
What you need for today:
- An espresso machine with a steam wand (if you have one). If you don't, read the note below.
- Whole milk. The kind in the carton. Low-fat or skim will make your life harder, and we're not making your life harder on day one.
