Chapter 1: First Day
Welcome. You're about to roast your first coffee. Not in some abstract, future sense—right now, in the next hour or so, in your own kitchen. You're not going to produce a perfect, professional cup. You're not going to master anything. But you are going to do the actual, physical act of transforming green, grassy-smelling seeds into brown, fragrant coffee beans, and you're going to drink the result. That's the whole point of today.
Before you stand up and start rummaging through your cupboards, let's get one thing straight: I'm not going to ask you to buy anything today. Not a machine, not a special thermometer, not a book. You probably own everything you need for your first session, and if you don't, a quick trip to your kitchen drawer will solve it. The most important piece of equipment is your own willingness to make a mess and watch what happens.
Here's what your first session will actually look like. You'll take a small handful of green coffee beans—those pale, hard, slightly grassy-smelling things that look more like seeds than anything you'd grind and brew—and you'll put them in a pan. Not a frying pan with a non-stick coating; that can overheat and release fumes. Look for a stainless steel or cast-iron pan, something sturdy. You'll also need a wooden spoon or a whisk, a colander, a plate, and an oven mitt. That's it. That's your entire setup.
