Chapter 1: Understanding Wheatgrass
To understand wheatgrass, you must first set aside the marketing. It is not a miracle substance, nor is it a distinct species of plant. It is simply the young, vegetative shoot of the common wheat plant, Triticum aestivum. It is a cereal grass, just like the lawn in your backyard, but harvested at a very specific, early stage of its lifecycle. The moment the plant begins to form a jointed stem and a seed head, it transitions from being "wheatgrass" to being "wheat." This single biological fact dictates the product's entire value proposition: you are consuming the plant's most nutrient-dense, pre-reproductive state.
The "how it works" begins with the seed. A wheat kernel is a dormant packet of energy, containing the germ (the embryo) and the endosperm (the food store). When you soak it in water and expose it to warmth and oxygen, you trigger germination. This is the critical biological switch. During germination, enzymes within the seed are activated, breaking down complex starches into simple sugars and proteins into amino acids. This is why wheatgrass juice is often described as "predigested" foodโthe plant has already done much of the digestive work for you. The grass you harvest is the product of this metabolic activity, and its chemical composition is entirely different from that of the dry grain.
This chapter will give you the grounding you need for the rest of this handbook. We will look at the biology of the plant, the nutritional science
