Vinegar is not merely vinegar. It is a biochemical product created through the controlled fermentation of sugar by specific living organisms, and the differences between vinegars — in origin, age, processing, and final chemistry — are as significant as the differences between wines. Understanding what vinegar actually is requires looking past the label and into the fermentation process itself: how acetic acid bacteria convert alcohol into acid, why this transformation matters, and how it affects the vinegar you use or source.

What Vinegar Is: The Biochemical Process

Vinegar is the result of two consecutive fermentation steps. The first step, alcoholic fermentation, converts sugars into alcohol. Yeast organisms (typically Saccharomyces cerevisiae) consume the sugars in fruit juice, grain, or other sugar-containing liquid and produce ethanol and carbon dioxide as byproducts. This is the same process that creates wine, beer, or cider. In a commercial winery, this fermentation is carefully managed and arrested before completion — the goal is a stable alcoholic beverage. In vinegar production, this first step often happens naturally, or the producer begins with existing wine, cider, or beer as a starting material.

The second step is acetic acid fermentation. Once alcohol is present in the liquid, acetic acid bacteria (primarily Acetobacter aceti) colonize the liquid and oxidize the alcohol into acetic acid.
