Chapter 1: Understanding Soy Milk Makers
A soy milk maker is a countertop appliance that automates the production of soy milk from dry soybeans. It replaces a multi-step manual process that traditionally involves soaking beans overnight, grinding them with water into a slurry, boiling that slurry, and then filtering out the insoluble fiber. A soy milk maker does all of this inside a single vessel, with a control panel that lets you set the program and walk away. What comes out is a fresh, hot, and unadulterated soy milk that you can drink as-is or use as a base for other products.
The core processing cycle is the same across almost all machines, regardless of price or size. First, the machine heats water to a pre-soak temperature. The dry beans are then added along with room-temperature water, and the machine begins the grinding phase. In a blade-based machine, a spinning stainless steel blade at the bottom of the jug chops the soaked beans into a fine slurry. In a stone-burr machine, the beans are fed between two abrasive discs that crush them more slowly and evenly. Either way, the resulting mixture is now a thick suspension of bean particles, water, and soluble proteins.
