A sneeze guard is a physical barrier designed to intercept airborne contaminants before they reach food that is exposed for customer self-service. When you see a clear panel hovering over a buffet line, a deli case, or a salad bar, you are looking at a piece of safety equipment whose specifications and placement are often dictated by public health codes. The primary function is straightforward: to block the path of droplets ejected from a person's mouth or nose during a sneeze, cough, or even normal speech, preventing them from landing on the food below. However, the simplicity of the concept belies the complexity of the engineering, the materials science, and the regulatory environment that surround it.
To understand how a sneeze guard works, it is helpful to understand what it is protecting against. When a person sneezes, they expel a cloud of droplets of varying sizes. The larger, heavier droplets fall quickly, usually within a meter or two. The smaller, lighter droplets, however, can remain suspended in the air for extended periods and travel much further, especially on air currents from an overhead vent or a nearby doorway.
