Salad dressing is not a simple condiment. At its core, salad dressing combines three things that do not naturally want to coexist: fat (oil), acid (vinegar, citrus, or other sour components), and water. These are fundamentally incompatible. Oil and water separate. Acid and fat can interact badly. Yet a well-formulated dressing holds all three in stable suspension, coating greens evenly and delivering flavor and texture in every bite. This is the central technical challenge of dressing formulation and the reason dressing is not simply "oil and vinegar shaken together."
