Simply put, a roaster oven is a countertop or standalone appliance that uses a fan-forced or convection heat source within an insulated cavity to cook at relatively low to moderate temperatures—typically from 150°F (65°C) to 500°F (260°C). A rotisserie takes this same principle and adds a motorized horizontal spit that rotates the food throughout the cooking cycle. The two are often combined in a single appliance—some manufacturers call these "rotisserie ovens" or "convection ovens with rotisserie function"—but they exist as separate devices at nearly every price point, from a basic $80 countertop roaster to a $10,000 commercial broiler rotisserie with a 45-chicken capacity.
Understanding what makes them valuable requires a bit of physical reality. The word "roast" means to cook with dry heat, often in the presence of open flame or heated surfaces. The core mechanical difference from roasting in a standard kitchen oven is the presence of a circulating heat source. A standard residential oven relies on a heating element at the floor and, in many cases, a natural convection pattern of hot air rising and cool air falling. That method is slow and uneven. An oven's hot air can stratify, leaving a 15°F temperature difference between the bottom and top rack. For a turkey or a large roast, this means the top is done while the bottom is still undercooked, or you are over-charring the edges to get the center to temperature.
