Chapter 1: Understanding Portafilters
Forget the image of the portafilter as just a handle. It is, in fact, a critical interface between you, the machine, and the coffee. It is the tool you use to move ground coffee into the group head and, more importantly, it is the vessel that shapes the water flow and pressure that creates espresso. Treat it as the precision tool that it is. Ignoring its condition or mismatching it to your machine is a primary source of poor extraction, channeling, and bad workflow.
In its most basic form, a portafilter consists of a handle, a body, and a metal basket (or filter) that sits inside that body. You grind coffee into the basket, tamp it flat, and then lock the unit into the machine's group head. When the machine is activated, hot water is forced through the coffee at a precise pressure, typically 9 bars, and out through the hole(s) in the basket. But that simple description hides a great deal of logic and design. Everything about the portafilter's shape, size, and material was designed for a specific purpose, and deviating from those specifications causes problems.
The interface between the portafilter and the machine begins with the bayonet mount. This consists of lugs—metal tabs—on either the portafilter or the group head, that slide into grooves in the other component. This design has been the industry standard for decades because it locks securely and quickly. The lugs are parts that wear out. Just like any mechanical
