A pizza pan is a flat or shallow metal plate or perforated sheet designed to hold pizza dough during baking, transfer heat efficiently to the baking surface, and support the weight and structure of a finished pie. It sounds simple—and in one sense it is—but the material it's made from, how thick it is, what coating or finish it has, and the shape of its edges all determine whether your crust bakes evenly, whether the bottom browns properly, how long the pan will last before it warps or rusts, and how much maintenance you'll perform over the life of the equipment. For a home cook, these differences might mean the gap between a soggy center and a crispy, even crust. The fundamental job of a pizza pan is to conduct and distribute heat. When you set a pan on a hot oven deck or place it directly on heating elements, the metal absorbs thermal energy and transfers it upward and across the surface of the dough. The dough itself doesn't touch the oven floor or elements directly; the pan sits between them. This buffering effect has immediate practical consequences.
