Pie and quiche pans are baking vessels whose primary job is to hold wet filling while transferring heat evenly and quickly from the oven to the dough below. That description sounds straightforward until you understand the competing demands built into that simple task. A pan must be strong enough to support several pounds of filling under heat without warping. It must conduct heat efficiently enough to set the bottom crust in a reasonable time—typically 15 to 45 minutes depending on fill depth and oven temperature—but not so aggressively that it browns the crust before the filling sets. It must release the finished product without damage. And it must do all of this repeatedly, hundreds or thousands of times, while remaining affordable enough that a bakery or home operation can justify owning multiple pans. What a Pie Pan Actually Does
The core function of a pie or quiche pan is thermal transfer. Heat enters the oven as air temperature—typically 350°F to 450°F depending on the recipe. That hot air contacts the pan's exterior surface and begins to conduct heat through the pan's material toward the filling inside.
