Chapter 1: Understanding pH Meters
A pH meter is the only instrument that tells you whether a solution is acidic, neutral, or basic with a number you can rely on. But that number is only as good as the system that produces it, and the system is more fragile than most users realize. Before you spend money on a new meter or trust a reading on a batch of product, you need to understand what actually happens when you dip a glass probe into a liquid.
At its core, a pH meter is an electrochemical sensor. It measures the voltage that develops between two electrodes when they are immersed in a solution, and it converts that voltage to a pH value. The relationship is defined by the Nernst equation, which in practice means that for every change of one pH unit, the voltage changes by approximately 59.16 millivolts at 25°C. The meter is essentially a very sensitive voltmeter calibrated to read in pH units.
Consider a winemaker testing the acid level of grape must before fermentation. He dips the electrode into the juice, and the meter reads 3.4. That number tells him the juice is acidic enough for a crisp, balanced wine. But what if the electrode is dirty, or the probe is old, or the meter was calibrated a month ago?
