Chapter 1: Understanding Peas

The pea you are buying is not just a bean. It is a race against time, a controlled explosion of chemistry that is triggered the moment the pod is picked. To understand peas is to understand this clock, because every decision a professional makes about handling, storage, and cooking is an attempt to cheat it. At the moment of harvest, a pea seed contains approximately 5-8% sucrose by weight. Within hours at ambient temperature, that sugar begins converting to starch, and the sweet, crisp texture you want becomes a mealy, floury one. This conversion rate slows dramatically at low temperature, which is why the entire commercial pea industry is engineered around speed and cold.

Botanically, a pea is the seed of a legume plant in the genus Pisum. The species that dominates global commerce is Pisum sativum. This includes the varieties you eat fresh or frozen (garden peas and sugar snap peas) as well as the dry peas used in soups and split-pea preparations. The pod is the fruit, but the seed inside is the product. For fresh and frozen markets, the seed is harvested at a specific stage of maturity called the "immature seed" stage, where the seed is fully formed but high in moisture and sugar. For the dry market, the same plant at a different stage is left in the field until the seeds reach low moisture content, around 14% or less, allowing them to harden and store for years.
