Oats, grits, and hot cereal are not a single product. They are a family of processed cereal grains that share one defining characteristic: they require cooking in water or another liquid to become palatable, and the cooking process transforms them from a hard, dry, storable form into a soft, digestible, and calorically dense food. This chapter establishes what these products actually are at the raw material and processing level, how the cooking process works chemically, and why that knowledge determines the difference between a consistent breakfast service and a batch of gummy paste.
At the base level, the category breaks into two distinct botanical and cultural lineages. The first is the oat, a cereal grain grown primarily in cool temperate climates. The second is corn, specifically in the form of coarsely ground or hominy-treated kernels, which produces grits and related cornmeal porridges. Farina, which is milled from wheat, and other preparations, such as rice congee or barley porridge, round out the category but share the same underlying principles. Understanding the raw botanical differences matters more than memorizing brand names: oats have a higher fat content than most other cereal grains, which directly affects shelf life and rancidity. Corn has a harder endosperm than wheat or oats, which affects how it must be ground and how long it must cook to become tender. Wheat for farina is milled specifically to retain the granular texture that cooks up smooth but not gluey.
