Nuts and seeds are not exotic superfoods or aspirational ingredients—they are foods with specific, measurable physical and chemical properties that determine how you source them, store them, process them, and ultimately whether they remain safe and usable or become waste. Understanding those properties is where competent nuts and seeds work begins.

What Nuts and Seeds Are, Botanically and Practically

From a botanical perspective, nuts and seeds serve a plant's reproductive purpose: they contain an embryonic plant, stored energy in the form of oils and starches, and protective structures (shells, skins, or waxy coatings) to survive until germination conditions are right. Commercially, we treat them as food ingredients, but their original purpose shapes everything about their behavior.

A nut, in botanical terms, is a hard-shelled fruit with a single seed inside—walnuts, almonds, hazelnuts, pecans. A seed, botanically, can come from vegetables (sunflower, pumpkin), legumes (sesame, flax), or other plant families (poppy, hemp). But in food manufacturing and commerce, the distinction matters less than you might think. What matters is this: both nuts and seeds are living organisms in dormancy. They do not decay like soft fruits. Instead, they degrade through oxidation, moisture loss or gain, and insect or mold colonization. A walnut stored correctly for six months remains nearly identical to a fresh walnut. A walnut stored in humid, warm conditions for six weeks can become rancid, moldy, or infested.
