The carton in a cafe's fridge labeled "oat milk" is not the same product as the raw oats in a bulk bin, and the difference is not just processing. That carton is a controlled chemical system - a liquid engineered to suspend particles, hold fat in an emulsion, and keep proteins soluble under heat and acid stress. The technical term for this system is an emulsion colloid. When a barista steams it, acidifies it with espresso, or freezes it into a solid, they are testing the limits of that system.
