Mustard is a colloidal suspension—a stable mixture of finely ground particles suspended in a liquid medium. Specifically, it is ground mustard seed combined with water, salt, spices, and often an acid (vinegar, citric acid, or both) and a binder (usually mustard flour itself, gum, or starch) that prevents the solids from separating and settling. To understand why this matters, consider what happens to mustard over time or under stress. Unlike oil-based condiments or simple sauces, mustard's stability depends on the balance between its solid particles and its liquid phase. If that balance shifts—through temperature change, age, exposure to air, or incompatible ingredients in a formulation—the particles begin to separate from the liquid. The result is visible: the bottom of the jar becomes runnier, a layer of brown solids settles, and the top becomes drier.
