To work with mushrooms professionally, you need to discard the idea that they are simply a vegetable, like a carrot or a head of lettuce. They are not. A carrot is a root that the plant grew to store energy. The mushroom is a reproductive structure, the equivalent of a flower or a fruit, of a much larger organism living mostly out of sight. This biological distinction is not a matter of academic pedantry. Let's start with what you are actually buying. The mushroom you see on the display table is the fruiting body of a fungus. The organism itself is a network of microscopic, thread-like cells called hyphae, which collectively form a web known as the mycelium. This mycelium lives in a substrate, which can be soil, wood, or a compost pile, and it is the engine of the operation. It secretes enzymes to break down organic matter and absorbs nutrients. When conditions are right, generally a combination of temperature, humidity, and a trigger like a drop in carbon dioxide, the mycelium pools its resources and forms a primordium, a tiny knot of tissue.
