Monosodium glutamate (MSG) is the stable sodium salt of L-glutamic acid, a naturally occurring amino acid that is among the most abundant in the human diet. Its chemical formula is C5H8NO4Na, and in its purified, commercial form it appears as a white, crystalline powder that resembles fine table salt in both texture and appearance. MSG is not a synthetic laboratory invention; it is produced through a fermentation process that mirrors the biological pathways the human body uses to produce glutamate itself. The commercial product is manufactured by fermenting carbohydrate sources such as corn, sugar cane, tapioca, or sugar beet molasses with specific bacterial strains — primarily Corynebacterium glutamicum — which excrete glutamate into the fermentation broth, after which it is harvested, neutralized with sodium hydroxide, purified, crystallized, and dried.
The practical importance of MSG rests on a single fact: the free (unbound) form of glutamate is one of the primary chemical triggers of the savory taste we call umami. When you eat a ripe tomato, aged Parmesan cheese, a slice of cured ham, or a bowl of miso soup, the characteristic depth of flavor you perceive is largely driven by the free glutamate present in those foods. Glutamate is present in many foods in two forms: bound as part of intact proteins, and free in solution. Only the free form interacts directly with the taste receptors on your tongue. MSG delivers that free glutamate directly, which is why adding it to a dish so reliably amplifies
