Chapter 1: Understanding Milk

Milk is a biological fluid produced by mammals to feed their young. On a grocery shelf or in a farm tank, it looks like a single product—white, liquid, roughly consistent. In practice, milk is a complex suspension whose composition varies hour to hour, animal to animal, season to season, and geography to geography. Understanding what milk actually is—not what marketing claims it is—is essential for anyone who needs to buy it, produce it, process it, or specify it correctly.

At its core, milk is mostly water: roughly 87 percent by weight. The remaining 13 percent is where the real complexity lives. That 13 percent contains fats, proteins, lactose (milk sugar), minerals, vitamins, and hundreds of other compounds in smaller quantities. These components do not dissolve uniformly. Instead, they form a colloid—a suspension where tiny particles (mainly fat globules and protein casein micelles) float throughout the aqueous phase. This physical structure is not permanent. Milk ages, separates, destabilizes, and spoils because of what happens to those particles over time.

Composition and What It Means

The four major components of milk each behave differently, and each matters for different applications.

Water is the base medium. It carries dissolved minerals, lactose, and water-soluble vitamins. When milk is concentrated (for yogurt, cheese, or powder), water is removed.
