A milk frother or steamer is a device that uses pressurized steam to heat and aerate milk, transforming cold liquid into a mixture of warm milk and microfoam—the stable, velvety texture essential to espresso-based drinks like cappuccinos, lattes, and flat whites. In professional beverage service, these devices are among the most-used pieces of equipment, yet their operation is often learned through imitation and trial rather than understanding. Understanding what they actually do—and why the physics matters—is the foundation for selecting the right equipment, operating it consistently, and troubleshooting when results deteriorate.

The Physical Purpose and Outcome

Milk frothers and steamers perform two simultaneous tasks: they heat milk to drinking temperature (typically 60-70°C, or 140-158°F) and they introduce air into the milk to create foam. The foam serves both functional and aesthetic purposes. Functionally, it changes the mouthfeel and body of the drink—a well-executed microfoam integrates with the espresso and adds viscosity and sweetness perception. Aesthetically, the foam layer on top of a cappuccino or the consistent microfoam throughout a latte signals craft and care to the customer. A weak or inconsistent froth, by contrast, signals a problem, whether equipment failure or operator error.

The end state—properly frothed milk—is not simple foam. It is emulsified milk with suspended microbubbles (typically 10-100 micrometers in diameter) throughout.
