Chapter 1: Understanding Juicers

A juicer is a machine that extracts liquid from fruits and vegetables by separating the juice from the pulp and fiber. That definition is technically correct but practically useless, because it tells you nothing about how a juicer actually works, why different machines produce dramatically different results with the same produce, or how to think about choosing one for a real environment—whether that's a restaurant kitchen, a juice bar, or a serious home operation.

The practical reality is this: a juicer is a tool that converts whole produce into liquid by forcing or pressing cells open, collecting the liquid that flows out, and either discarding or collecting the solids. How it accomplishes that conversion determines almost everything that matters—the speed of extraction, how much juice you get from a pound of carrots, whether the juice oxidizes and browns within an hour or stays fresh for a day, how much heat builds up (which affects enzyme preservation), what kinds of produce it can handle, how often it jams, how much noise it makes, and how long it lasts before parts start failing.

Three fundamentally different mechanical approaches have emerged: centrifugal extraction, auger-based extraction, and hydraulic pressing. Each uses physics differently. Understanding which one you're dealing with—and why—is the foundation for every decision that follows: what you buy, how you use it, when it fails, and what it costs to run long-term.
