Chapter 1: Understanding Jerky

Jerky is a shelf-stable, dehydrated protein product with a specific moisture content range (typically 15-25% by weight), a particular texture profile, and a defined shelf life when stored properly. It is not simply dried meat, and this distinction matters in practice. When a producer, buyer, or operator understands what jerky actually is—what standards define it, how those standards are enforced, and why they exist—decisions about sourcing, storage, handling, and application become more straightforward and more reliable.

The core mechanism that makes jerky work is the removal of water. Raw meat typically contains 60-75% water by weight. When meat is dehydrated to a moisture content of around 20%, the water activity (a measure of available water for microbial growth and chemical reactions) drops to a level where pathogens cannot reproduce and spoilage is dramatically slowed. This is not new technology. Humans have dried meat for thousands of years—sun-drying in arid climates, smoking in cool regions, salting and aging in controlled environments. Modern jerky production uses the same principle but with controlled temperature, humidity, and air movement to achieve consistent results.

However, simply drying meat does not automatically produce jerky. Consider the differences: a piece of beef brisket slow-roasted at low temperature for hours becomes tender and flavorful but remains too moist to be shelf-stable without refrigeration.
