A jerky gun is a handheld device used to extrude ground, seasoned meat into uniform, shaped strips directly onto a dehydrator tray or smoker rack. It is not a slicer, a grinder, or a cure injector. It is a portioning and shaping tool that serves a single, specific purpose: converting a batch of ground meat into a consistent, repeatable shape for dehydration. Understanding it starts with recognizing that the machine is essentially a large, specialized syringe for meat.
The device operates on a simple mechanical principle. The main body is a sturdy, food-grade cylinder, often made of a high-impact plastic or, in some commercial models, stainless steel. This cylinder holds the seasoned ground meat. A handle attached to a plunger or a screw-driven piston is used to create pressure inside the cylinder. This pressure forces the meat out through a small opening at the bottom, called the extrusion nozzle or cone. The shape of this cone determines the final profile of the jerky strip. A flat, wide cone produces a standard flat strip. A round cone produces a jerky stick or "slim jim" shape. Different cones allow the user to change the final product's geometry without changing the equipment itself.
