It sits beneath or beside the ice maker, silently holding a product that is simultaneously essential, easy to contaminate, and prone to melting. This is the ice bin, a piece of equipment that gets little attention until it fails, overflows, or produces a batch of ice that tastes like last week's fish. First, a foundational definition. An ice bin, in the commercial sense, is not a cooler or a freezer. Its primary function is to separate the ice from the ambient heat of the room and from physical contamination. It buys you time. An ice machine might produce 400 pounds of ice per day, but a busy bar might need 50 pounds of it between 6 PM and 9 PM. The machine cannot produce ice that fast. The bin stores the ice that was made during off-peak hours and holds it for you until you need it.
