Herbs and spices are dried plant material—leaves, seeds, bark, roots, flowers, or fruit—used primarily to flavor food. That is the technical definition. But for anyone buying, using, or selling them professionally, this definition is almost useless. What matters is that herbs and spices are organic products with measurable quality variations, significant shelf-life constraints, volatile chemistry, and real costs—and understanding how they actually work is the foundation for making sound sourcing and usage decisions.
At their core, herbs and spices deliver flavor through volatile compounds and essential oils. A bay leaf contains linalool, eugenol, and other molecules. Black pepper gets its heat from piperine. Cilantro's distinctive taste comes from aldehydes; those same compounds are why some people find it tastes like soap. These active compounds are not stable.
