A griddle or grill pan is a cooking surface—flat or ridged, large or small—designed to transfer high heat directly and evenly to food. Unlike a pot or skillet with sloped sides, griddles and grill pans have flat or nearly flat cooking surfaces with walls low enough to flip or slide food easily. They sit over an open flame, electric coil, induction cooktop, or built into a commercial range, and they conduct heat from the source through metal to whatever food is laid on top.

What a Griddle or Grill Pan Does

The core function is direct heat cooking: applying sustained, controllable heat to a large surface area so you can cook multiple items at once, or cook items that require a flat cooking plane—pancakes, flatbreads, vegetables cut in half, proteins that benefit from a seared flat surface. A griddle is flat. A grill pan has a ridged surface that creates contact lines (sear marks) and allows fat to drain away from the food.
