A food smoker is a chamber designed to expose food to smoke and heat—typically in the 225°F to 350°F range—for extended periods, usually two to sixteen hours, to cook the food and infuse it with smoke flavor. That sentence captures the basic function, but it obscures the actual discipline: smoking is a controlled application of heat and smoke to achieve specific results.
