Chapter 1: Understanding Flour
Flour is a powder made from grinding grain. That sentence is technically accurate and completely insufficient. What flour is, at a molecular level and in your mixing bowl, determines whether your dough rises predictably, whether your cake has the right crumb, whether your noodles hold together, and whether you can rely on consistent results from one batch to the next. Understanding flour means understanding what happens when you add water to it, how heat and time change it, and why two bags labeled "flour" can behave differently in identical formulas.
Start with the grain. Wheat is the dominant flour grain in the developed world, though flour is also milled from rye, barley, oats, corn, and dozens of other cereals. A wheat grain has three parts: the bran (the tough outer layers, rich in fiber and minerals), the germ (the nutrient-dense embryo), and the endosperm (the starchy interior that feeds the germ if the grain germinates). Milling separates these parts. White flour is milled from the endosperm alone. Whole wheat flour retains all three. The distinction matters immediately: whole wheat flour absorbs more water, ferments faster, browns more quickly, and has a shorter shelf life because the germ contains oils that can go rancid.
The endosperm itself is not homogeneous. It contains starch granules (spherical structures packed with carbohydrates), protein bodies, and small amounts of fat, minerals, and enzymes. When you mill the grain, you're breaking down these structures into smaller and smaller particles. The fineness of
