An electric knife is a system. The motor in the handle provides rapid, oscillating motion, but the tool performs work only through the blade that carries that motion into the material. A replacement blade is not an accessory; it is the primary interface between the machine and the food. Understanding the blade on a functional level is the starting point for everything else in this handbook, because a blade is a consumable part, a wear item, and its correct selection and maintenance determine the quality of every single cut you make.
When you press the trigger of a typical electric knife, you are engaging a small electric motor connected to a gearbox or a direct-drive mechanism. This mechanism converts the rotational motion of the motor into a linear, reciprocating movement. This is a back-and-forth push-pull action, not a rotary sawing motion like a circular saw. The blade is fixed into a collet or a chuck in the handle and is driven from the rear end. The blade's own geometry, specifically its teeth or edge, performs the cutting. The motor provides the speed, but the blade provides the science of separation.
The two-piece design of most consumer and many light-commercial electric knives is critical to understand. You will almost always have a main blade and a smaller, secondary or utility blade. The main blade is designed for large tasks like carving roasts, hams, or turkey breasts.
