Chapter 1: Understanding Dry Beans

A dry bean is not a static commodity. It is a dormant seed, a living organism in a state of suspended animation, waiting for the right combination of moisture and temperature to resume its life cycle. This single fact governs everything else: how you store it, how you cook it, how you judge its quality, and why it can fail you in ways that seem mysterious. When you understand the bean as a seed, most of the practical knowledge in this handbook follows naturally.

The seed is a package built for a single purpose: to survive until conditions are right for germination. Inside the hard seed coat is an embryo, the future plant, surrounded by two large cotyledons. The cotyledons are the seed's food supply—stored starch and protein that the young plant will draw upon until it can photosynthesize on its own. When you cook a bean, you are doing the same thing the plant's own enzymes would do, but with heat and water instead of simply moisture and time. You are breaking down those stored reserves into forms your body can digest. This is why beans are so nutritionally dense: they are essentially concentrated plant food.
