What a Donut Is, Technically and Commercially

A donut is a piece of sweet, leavened dough that is cooked by deep frying in hot fat, then typically finished with a glaze, icing, sugar, or filling. That definition covers almost everything sold as a donut, from a glazed yeast ring to a filled cake round, but it hides the two critical variables that determine nearly every other property of the product: the leavening mechanism and the cooking medium. The leavening mechanism—whether the dough rises from yeast fermentation or from chemical leaveners like baking powder—sets the fundamental texture and density of the crumb. The cooking medium—hot oil—sets the crust, the moisture profile, and the shelf life. If you understand those two variables, you can predict, troubleshoot, and control almost everything else that happens in your fryer.

There are two primary dough families in the donut world. Yeast-raised donuts, sometimes called raised donuts, use baker's yeast to produce carbon dioxide gas, which inflates the gluten network slowly and steadily. The result is a light, airy crumb with a slightly chewy bite and a relatively thin, tender crust. Cake donuts use chemical leavening agents, usually baking powder or a combination of baking soda and an acid, to produce gas quickly during mixing and frying. The result is a denser, more crumbly texture that resembles a sweet quick bread, cut into a ring or round shape.
