Most professionals who use dish detergent every day could not explain what it actually is. That is not a criticism. A line cook who runs a triple-sink station does not need to know the critical micelle concentration of sodium lauryl sulfate to get plates clean. But the moment you are responsible for purchasing, for managing costs, for fixing a recurring film problem, or for satisfying a health inspector, the gap in that knowledge becomes expensive. This chapter closes that gap. It gives you a working model of what dish detergent and soap are, how they clean, and why that understanding translates directly into better results and lower costs in your specific operation.
Start with a simple clarification because the terms are often conflated. Soap and detergent are not the same thing, and the distinction matters more than most people realize. Soap is a specific chemical compound: the salt of a fatty acid. It is made by reacting fats or oils with an alkali, typically sodium hydroxide (for hard soap) or potassium hydroxide (for liquid soap). This process, called saponification, is the same chemistry that human beings have used for thousands of years. Traditional soap works well in soft water, but it reacts with calcium and magnesium ions in hard water to form an insoluble precipitate, commonly called soap scum. That scum leaves a film on dishes, dulls glassware, and can actually redeposit soil onto surfaces.
Detergent, in contrast, is a broader category of
