What Milk Is and Why It Matters

Milk is not a simple liquid. It is a complex colloidal suspension containing water, proteins, fats, lactose (milk sugar), minerals, vitamins, and thousands of other compounds, including living bacteria. The exact composition varies by species (cow, goat, sheep), breed, individual animal, feed, season, and stage of lactation. A Holstein dairy cow produces milk with roughly 3.5 to 4% butterfat and 3.2 to 3.4% protein. A Jersey cow, by contrast, produces milk with 5 to 6% butterfat and 3.6 to 3.8% protein—richer but in much smaller volumes.
