Cottage cheese is a fresh dairy product made by curdling milk with acid, cutting and draining the resulting curd, and mixing it with a cream-based dressing. What sounds like a simple three-step process becomes nuanced quickly once you begin sourcing, using, or producing it. The product's texture, flavor stability, shelf life, nutritional profile, and cost-in-use depend on decisions made during production—decisions that are invisible in the finished product but utterly visible in how the cheese performs in your operation.
To understand cottage cheese practically, you need to know what actually happens to milk when you make it, why that process creates the product you see in a container, and why the variations that seem small on paper produce dramatically different results in real use.
What Cottage Cheese Actually Is
Cottage cheese begins with milk—almost always milk that has been pasteurized, though Ultra-High Temperature (UHT) processing is also used by some manufacturers. The milk is heated to a specific temperature, then an acid is added. This acid can be citric acid directly, or the acid can be generated by adding bacterial starter cultures that ferment lactose into lactic acid over several hours. Either way, the acid causes the milk's casein protein to denature and coagulate, forming a delicate curd that floats in the whey (the liquid remaining after the protein aggregates).
