Chapter 1: Understanding Cooktops

A cooktop is a cooking surface that uses heat from gas, electricity, or electromagnetic induction to warm cookware and cook food. It sits on top of a counter, cabinet, or cooking range and is one of the most used—and least understood—appliances in any kitchen. The choice between a gas cooktop, an electric resistance cooktop, and an induction cooktop involves real trade-offs in performance, cost, safety, installation, and maintenance that most buyers never fully examine.

To understand why these trade-offs matter, you need to understand what each type actually does. A gas cooktop burns natural gas or propane in open flames under the cookware. You adjust the flame by turning a valve, and the heat output changes instantly. The flame is visible and direct—you can see whether the burner is on or off, and you can adjust heat in real time by moving cookware into or out of the flame. A residential electric cooktop uses electric resistance coils or a smooth ceramic glass surface under which coils heat up. The heating element takes time to warm up and cool down, and the temperature is not continuously adjustable the way gas is—you select a heat level, the element cycles on and off to maintain that level, and adjustment is slower. An induction cooktop uses electromagnetic energy to induce heat directly inside ferromagnetic cookware (iron and steel).
