Chapter 1: Understanding Cooking Thermometer Accessories
Every time you read a temperature, you are reading the end of a chain. The thermometer in your hand or on your counter is the part you see, but it is only the final link in a measurement system that begins at the point of contact between a probe tip and the food, passes through an electrical signal carried along a wire, and ends as a number on a display. The accessories are the links in that chain. When one of them fails, is mismatched, or drifts out of calibration, the display gives you a number that looks perfectly confident and is simply wrong.
Consider a concrete failure. A mid-sized restaurant runs two combi ovens side by side. Both are set to 75°C for a large batch of braised short ribs. The kitchen uses needle probes inserted into the thickest part of the meat, connected to a two-channel thermometer. On the left oven, the probe cable is routed through the door gasket. On the right oven, the cable is routed through the oven's built-in probe port. The left oven reads 71°C after six hours. The right oven reads 75°C. The chef trusts the thermometer and pushes the left oven for another 45 minutes. The left oven's short ribs are overcooked. The culprit is not the meat, not the oven, and not the thermometer display. It's the accessory cable passing through a gap in the gasket, which exposed the wire to ambient kitchen heat and
