Cooking and baking ingredients are materials. They have measurable properties—protein content, particle size, moisture level, pH, fat composition, mineral density—that determine how they perform in heat, how they combine with water, how they oxidize over time, and how they interact with other ingredients. These properties do not vary based on tradition, brand loyalty, or chef intuition. They are consistent, testable, and documented in ingredient specifications. Understanding what these materials actually are, rather than what they are called, is the foundation of working with them intentionally.
When you buy flour, you are not buying "flour." You are buying a specific product with a measurable protein content—typically 10 to 15 percent in all-purpose flour—that determines its gluten-forming capacity and therefore its suitable applications. A 10 percent protein flour will produce a more tender cake; a 14 percent protein flour will produce chewier bread. A pastry chef who needs a tender crumb selects the 10 percent product deliberately, not by accident. A bread baker who needs structure selects the 14 percent product because it is the correct material for the job, not because it is traditional.
When you buy leavening agents—baking soda, baking powder, or yeast—you are buying chemical or biological materials that produce carbon dioxide gas under specific conditions.
