A coffee maker or espresso machine is a piece of equipment designed to extract soluble compounds from roasted, ground coffee using hot water. That simple sentence conceals a working definition that matters: these machines are not containers or kettles. They are precision instruments that control the temperature of water, the pressure at which water contacts coffee grounds, the time water spends in contact with those grounds, and the rate at which extraction occurs. Small differences in any of these variables produce dramatically different beverages—from sour, under-extracted coffee to bitter, over-extracted shots. Understanding how these machines work, and why they work that way, is the foundation for choosing the right equipment, operating it correctly, maintaining it, and troubleshooting it when something goes wrong.
What Coffee Extraction Actually Is
Before examining how machines work, it helps to understand what happens when hot water meets ground coffee. Coffee beans contain hundreds of compounds: acids, sugars, oils, proteins, and other soluble and insoluble substances. When hot water is applied to ground coffee, some of these compounds dissolve into the water, creating the beverage we drink. Others do not dissolve and remain as grounds or sediment. The process of selectively dissolving those compounds is called extraction.
Extraction is not instantaneous and not total. In the first seconds of water contact, faster-dissolving acids and sugars begin to emerge. As contact time increases, more compounds dissolve—up to a point. If water remains in contact with the grounds too long,
