Chapter 1: Understanding Cheese
Cheese is not an artisanal mystery. It is food engineered through fermentation, moisture control, and salt—a set of deliberate decisions made by producers that determine how a cheese will taste, melt, age, store, and perform when you use it. Understanding what cheese is, at a practical level, means understanding these decisions and why they matter when you are evaluating, choosing, storing, and using cheese in a professional or serious hobbyist context.
At its core, cheese begins with milk. Milk contains three primary components: water, milk fat (cream), and milk solids—mostly protein (casein) and lactose (milk sugar). When a cheesemaker adds rennet (an enzyme) to warm milk, the casein proteins coagulate and trap the fat, forming a solid curd while the liquid whey (water, lactose, and other proteins) separates. This is the first critical decision: how much whey to remove determines how much moisture remains in the final cheese, and moisture governs shelf life, texture, aging potential, and how the cheese will behave during cooking.
A fresh cheese like ricotta or quark removes almost all whey, leaving a wet, spreadable product with very high moisture (typically 70 percent or more). This cheese is shelf-stable only for days or a few weeks because the high moisture content supports rapid bacterial and mold growth. A hard cheese like Parmigiano-Reggiano removes nearly all whey through long, careful heating and stirring of the curds, leaving moisture at 30 percent or lower.
