The charcoal briquette you buy in a 10-pound bag is not a lump of natural material. It is a precision-made, compressed fuel pill, engineered to burn at a predictable rate for a predictable duration, yielding a predictable amount of ash. Understanding what these briquettes actually are, and the physics and chemistry that govern how they burn, is the difference between guessing at your cook and controlling it. For a restaurant that serves 200 dinners a night, or a competition team running a 100-pound cook, that difference is money and reputation. This chapter gives you the baseline knowledge you need before you buy, test, or even light another briquette.
The raw material: from tree to carbonized fuel
Commercial charcoal briquettes start with hardwood, typically oak, hickory, maple, and sometimes beech or birch. The wood is first converted into charcoal through a process called pyrolysis. The wood is heated in the near-total absence of oxygen, in large steel retorts or traditional kilns. During pyrolysis, water evaporates, followed by volatile organic compounds such as methanol and acetic acid. What remains is a carbon-rich, brittle solid that retains the original cellular structure of the wood. This is called char or charcoal.
It is important to understand that a "charcoal" briquette is not the same thing as a lump charcoal product. Lump charcoal is the raw char from the kiln, broken into irregular pieces. Briquettes are an entirely separate product category—they are crushed char mixed with additives and pressed under
